You can improvise with this all you want.
It's one of my "throw together" recipes. Fry up a bunch of chopped onion and garlic until it’s half cooked. Add some sliced zucchini and yellow squash. (I added some leftover fresh corn, and think this would be good with tomatoes too) Cook until tender, set aside. Fry up some sausage, whatever kind you like. Drain that and crumble it over the vegetables. Boil up enough rigatoni or rotini pasta to blend with this. Drain the pasta and mix with the vegetables. Add a cup or two of spaghetti sauce. Add a buttload of mozzarella cheese and blend well, so that the cheese Is blended throughout, not just on the top. Top with parmesan cheese. |
