Thai Corn and Coconut Soup
1 onion or 5-6 green onions, diced or chopped small 1 red pepper, diced 3 cloves garlic, minced 2 14-oz. cans light coconut milk 1 1/2 c. milk, rice milk, or soy milk 2 tsp curry powder 16 oz. bag frozen corn cayenne to taste juice of 1/2 lemon 1/2 c. or more chopped cilantro (coriander) salt and pepper Saute onion and red pepper, add garlic. Stir in curry powder, saute for a minute. Add coconut milk and other milks, season to taste, add corn, bring to simmer, stir in cilantro, and devour!
